Since it’s unlikely that I’ll be writing here again before the Thanksgiving holiday here in the USA, I thought it would be good to share some of the information I picked up in various places about buying turkey. For those of you who live in other parts of the world, please know that the information in this article is valid for anyone, anywhere, who is purchasing a turkey for dinner. As for the USA holiday called, Thanksgiving, well, if I remember correctly it all started when a bunch of people on a boat from England who were escaping tyrannical practices bumped into a rock in Massachusetts. They sat down for a big feast with some Native Americans and that got this whole Thanksgiving thing going.

(I’m kidding around, folks, don’t write me nasty comments!)

One of the standard meals for the Thanksgiving holiday dinner is turkey. There’s also a lot of ham eaten on this family dinner get-together, but turkey is the old standby.

When it comes to buying your bird, there are several options, such as fresh, frozen, and self-basting. And when it comes to following a good healthy diet, skinless white turkey meat is an excellent source of lean protein.

Here’s a guide to some popular varieties of turkey to help you decide what’s right for your table:

* Frozen: Turkeys labeled “frozen” are flash frozen down to 0°F right after processing. They’re every bit as flavorful as fresh ones. If you purchase a frozen turkey, allow plenty of time for it to thaw. The best methods: Thaw the bird for several days in the refrigerator or for up to 12 hours in a sink (or other vat-like container) in very cold water, making sure to replenish the cold water every 30 minutes.

Never thaw your turkey at room temperature (like on the counter) to avoid harmful bacteria.

* Fresh: Fresh turkeys are only chilled and thus have a shorter shelf life than frozen turkeys. Because you don’t have to thaw them, they are a more convenient option. Be careful, though, the fresh turkey will spoil quickly.

* Self-basting: Turkeys labeled “self-basting” have been injected with a solution intended to make them more flavorful and tender, which ends up saving you time, since these turkeys have been salted or otherwise seasoned. This means you can skip brining or marinating that can take several hours — plus, you’re virtually guaranteed a moist and flavorful bird.

* Organic: Organic turkeys come frozen, fresh, and self-basting, and are raised on organic feeds and without antibiotics. No matter which type of bird you choose, figure that you need 1 to 1 ½ pounds of turkey per person.

Once you’ve determined the type and weight range you need, find the roundest bird available. Then clear out the freezer or refrigerator to make room for the turkey!

    This year my wife decided to have a dry run thanksgiving day to test out her recipes. We soaked the bird in a brine solution she got at William Sonoma it really kept it moist. OMG, the turkey was so good and I get to do it again in a few days!
