The Wellness of YOU! – # 190 – Cool ways to Cook Fish

Since we were talking about Salmon in my last blog post, I thought it might be helpful to give you some easy and tasty tips on some of the best ways to cook fish. I know it’s been longer than a week to get back here to you — so I hope you’re still checking in here. Be sure to pass this blog link along to your friends, too. It seems that most people get a little scared when it come to cooking fish anywhere but on the grill. I’m sort of the opposite, I know how to cook it off the grill, but I’m not the best at cooking it on the grill. So, here are some of my tips:

First, remember, these are worth learning about. Fish is rich in those heart-healthy omega 3s, so it’s worth learning how to prepare it so you can enjoy it as often as you want.

Sautéed fish fillets:

Try this method for any type of skinless fish fillet. First, season the fish with salt and pepper, as desired, and heat a skillet with 1 tablespoon of extra-virgin olive oil. Cook the fish over medium-high heat, 2 to 3 minutes per side, for every 3/4 -inch of thickness. (The thicker the fish, the longer the cooking time.)

Braised fish fillets:

This preparation style requires cooking in a liquid, such as broth, white wine, clam juice, or water. First, heat some olive oil in a skillet over medium-high heat, then add the liquid and any seasonings and bring to a simmer. Add the fish fillets, cover, and cook for 3 minutes on both sides. (Again, a fish thicker than 3/4 inches will require a longer cooking time.)

Baked fish fillets:

Grease a baking sheet and arrange with fish fillets seasoned to taste. Bake at 350°F for about 7 to10 minutes for each inch of thickness. It’s not necessary to turn the fish.

Broiled fish steaks:

Broiling works best with any type of fish steak. Season the steaks to taste and brush with olive oil. Place them in a broiler pan and broil, 4 to 6 minutes on each side, or until golden. Allow more cooking time for steaks thicker than 1 inch.

The best way to test that your fish is done and ready to eat is to poke it with a fork at its thickest point. Perfectly cooked fish should be opaque and moist, not dry and flaky. Undercooked fish looks raw. Salmon and tuna are the exceptions, as both can be served rare on the inside as long as the fish itself is very fresh. (Of course, if the fish isn’t fresh, don’t buy it.)

Oh, and one more tip on frozen fish. If you want to be sure to preserve the freshness of the fish and to avoid overcooking it, make sure that you defrost the fish in the refrigerator. Don’t thaw it at room temperature or under warm water, or in the microwave. That’s going to make your fish become older than its time — the freshness will be gone.

The Wellness of YOU! – # 189 – Salmon – Wild or Farmed?

One of the aspects of shopping for good food that’s been confusing for me over the past few months is whether to buy salmon that’s wild or salmon that has been farm-raised. Here’s some information that I discovered in some research I was doing today.

Most everything I read says that we should choose the wild variety of salmon instead of the farm-raised. Of course, the hard part is finding it to begin with. But, assuming you can find it, a recent journal of Science says that farmed salmon has more potentially dangerous toxins than salmon caught in the wild.

Researchers analyzed 700 wild and farmed salmon bought in 16 different cities in Europe and North America and found that farmed salmon contained unusually high amounts of industrial by-products, pesticides, and suspected cancer-causing agents known as polychlorinated byphenyls (PCBs). What causes the contamination? The food given to the salmon while in captivity is contaminated with PCBs.

So, now that we know that, how the heck do you tell the difference when you’re standing at the fish counter in your local market? I know that in most cases, if you’re in a large super-market, there’s probably not a good way to tell — nor is there someone to ask who might know. That’s not always the case, so give it a try. In a good fish market, you can ask the fishmonger — they should know.

If there’s no one to ask, or if the person behind the counter isn’t sure, then check the color. You’re probably familiar with the light pink color of farmed salmon — wild salmon is a brighter, deeper shade of red. The price may also be a giveaway — farmed salmon is less expensive than wild salmon because it is more widely available.

Most importantly, whatever you do, don’t stop eating salmon. It remains a great source of heart-healthy omega-3 fatty acids. Just keep in mind that it may be safer to “go wild”! And if you can’t find wild salmon, try getting rid of some of the fat — that’s where the PCBs accumulate — from farmed salmon by removing the skin and grilling the fish. Another convenient option is canned or pouched salmon, which is almost always wild.

Hopefully, you can find a good fish market in your area where you can be more certain of which type of salmon you’re getting.

The Wellness of YOU! – # 188 – Got Time for Breakfast?

It seems as though breakfast is the one meal that many people are tempted to skip. It’s the one time of day when we’re more likely to run out of time. We might sleep a little late. We might have an early meeting at the office. Our ride is going to show up early. There are a multitude of invasions on our time to eat or time to prepare something good to eat for breakfast. And yet, it’s the most important meal of the day.

The problem with these scenarios is that we tend to introduce substitutes like a grabbing a bagel or or donut on the way to work or we end up skipping breakfast altogether. It’s not only us that will suffer when this happens, but our kids may end up learning this sort of lifestyle, as well.

Whenever we choose to go for those refined carbs instead of healthy food, we cause our cravings to return and/or we end up overeating throughout the day.

Fortunately, there are a number of delicious breakfast options that are perfect for eating on the go.

Here are some ideas — and remember — these are just for those times when you are pressed for time and can’t put together something more substantial:

* Pre-cooked deviled or hard-boiled eggs (Hard-boiled eggs will stay fresh in the fridge for up to a week.)
* Celery sticks with natural, no-added-sugar peanut butter
* Single-serve nonfat or 1-percent cottage cheese cups
* Pre-cooked turkey bacon
* Individual low-fat cheese slices or low-fat cheese sticks
* Sliced turkey or other low-fat meats
* Tomato or vegetable juice cocktail in single-serving cans
* Low-fat or nonfat artificially sweetened, flavored yogurt (Limit to 6 ounces daily and make sure to avoid yogurts with added sugars.)
* Whole-wheat sliced bread or whole-wheat English muffin topped with low-fat cheese or part-skim ricotta cheese.
* Fresh berries or other seasonal fruit
* Steel-cut or slow-cooking oatmeal (Season with cinnamon and artificial sweetener to perk up the taste)

Give these a try when you’re pushing for time — and stay away from the junk food!
